Our North Carolina Cookies

We are cookie lovers! My favorite is chocolate chip, but sometimes we need variety. On Dec. 7th, I was home baking a batch of these soft gingersnaps. Around noon, Jonathan came home and said that an ice storm was coming and that we needed to leave for North Carolina. I packed up the cookies (among other things), and we left. We ate these cookies all the way to North Carolina. No, it wasn't healthy, but it was delicious! The next day our beautiful daughter was born. So now I love making these cookies because it reminds me of our wonderful trip to NC and they are, of course, soft, chewy, and tasty!

Marge Thueson's Soft Gingersnaps
3/4 cup butter 1 egg
1 cup sugar 2 cups all-purpose flour
1/4 cup molasses 1 tsp. ginger
2 tsp. baking soda 1 tsp. cloves
1 tsp. cinnamon additional sugar
1/2 tsp. salt
Cream butter in a large bowl; gradually add 1 cup sugar, beating until light and fluffy. Add egg and molasses, and beat well. Sift together flour, soda, salt, and spices. Add to creamed mixture, beating until smooth. Chill 2 hours.
Shape dough into 3/4 inch balls, and roll in additional sugar to coat well. Place 2 inches apart on greased baking sheets. Bake at 350 degrees for 8 to 10 minutes. Cookies will puff up and flatten. Cool slightly on cookie sheets; remove to wire racks to cool completely. ENJOY!!

Oh, those look delicious. yum! I especially love having recipes that are attached to memories, so that's neat that you have this one. And i love that you renamed them your North Carolina Cookies. I rename recipes too, when they remind me of a memory! So cool! :) I'll definitely try this recipe out.

Cookies must be in the Olsen blood. We have cookie night on Sundays...Shhh Don't tell anyone, but Jeremy always makes the cookies. I probably haven't made any in over a year. He tried to teach Mom how to make his chocolate chip cookies several different times while she has visited...but I think he just has the touch because she can't seem to replicate them.
