Jonathan came home from MO on Tuesday, and he has had the rest of the week off. It's been so nice. Since he was home, I decided it was a good time to can since he could entertain the little people for me. I got a pressure cooker for my birthday from Jonathan, his mom, and sister, and I was excited to try my hand at it. I canned 16 pints of chicken (only half are shown here) and over 20 quarts of apple pie filling. We joke that if a disaster happens, at least we'll live off of chicken and pie. Doesn't sound so bad to me.
Then last night, we had Jonathan's sister, Tami, over for dinner and then later Jeremy and his family came over. Once again, it was so much fun. It's so nice to have family close. The only sad thing was that Sami fell asleep before her cousins came and she actually stayed asleep for their visit. She's been fighting a cold, so I think she needed the rest.

Good for you for canning! I want to get into that too. My VT just brought me some canned peaches that she canned herself after going to the Farmers Market last year. SOOO yummy!
Way to go, Chrissy!!! I thought canning was almost a lost art. When Dave and I first moved to Utah (pre-kids) we had a huge garden and I canned everything because we were so poor. It's a great skill to have.
Those are some classic pictures of our husbands! I am so sad that we left our apples on your counter. I will have to use it as an excuse to come up and visit soon. Thanks for having us over the other night. We all enjoyed it.

Whoa girl! I saw this post a couple of days ago, and it gave me a whole new respect for you. Good job on canning that much food, with a husband in med. school and two little ones. When I get a bigger kitchen and all the supplies, can I recruit you to show me the ropes? I grew up with tons of canned food, and love it because it's so useful, cheap, and yummy! Way to go.
I will just be a parrot today and conclude with what everyone else has already said... WOW! Good for you on the canning. I really should be better, but humm, lazy is part of my anatomy! DARN! I will just know who to run to if there was indeed a disaster. That pie filling is really making me hungry! I bet your homemade pies are delightful!

How awesome!! I REALLY want to can chicken because let's be honest, that's all I ever use is the Costco Canned chicken!! I might as well make my own. Way to go!
